MUSHROOM PASTA with HEMP SEED GOAT CHEESE


Did your date fill up on dairy cheese and spend all night gassing up the room? Sounds like shit. You should've served Mushroom Pasta with HEMP SEED GOAT Cheese instead, and made date night dairy free. No flatulence, only love. 

INGREDIENTS

16 oz dry pasta 
2 tbsp plant based butter
1 tub Grounded GOAT cheese (keep the marinade!)
1/3 cup Grounded CHEESE FREE CHEESE sauce - American Style
24 oz fresh mushrooms, sliced 
2 tbsp minced garlic 
1 cup of white wine 
2 cups chopped spinach and arugula
salt and pepper

METHOD

  1. Heat the butter in a large pan over a medium heat. Add the mushrooms and saute until golden brown. Season with salt and pepper. Add the garlic and white wine and cook until reduced slightly (about two minutes). Stir in the cheese sauce and remove from heat.
  2. Cook pasta according to packet directions. Drain, but save some of that pasta water! We'll use that in a sec.
  3. Add the pasta and spinach to the pan with the mushroom sauce and fold through gently. Use the remaining pasta water to loosen the mixture to your desired consistency. 
  4. Transfer pasta to serving bowls and top with dollops of GOAT cheese. Add a sprinkle of GOAT cheese marinade if desired.
